To me, hipster pop is bands like: CSS, MGMT, Bonde Do Role, the Ting Tings etc. The kind of music that is catchy but isn't very technical. The synthesizer equivalent of the explosion of British not-so-good-musicians-but-somehow-topping-the-charts bands circa 2004.**
While other fads are cyclical, i don't think hipster pop will ever make it round again. I just can't see people listening to these bands in 10 years time when they haven't had a hit for a while and nobody wants to see them play anymore, even though it only costs $15 to get in.
Having said all this, for the past month or so, I've been listening to this song a lot:
After hearing it the first time (she does have a pleasing singing voice) i checked out who the singer was. Probably doesn't help (my listening of the song) to find out she is also not too bad on the eyes:

Fortunately for me though; i finally acquired the new albums of Beirut, Bat for Lashes*** and An Horse. Rest easy, only quality music blasting in my home for the foreseeable future.
*I'll happily admit that i dressed quite hipster for a while a couple of years ago. It was a good idea at the time, you know, but i got over it.
**not to be confused with the explosion of British bands in the 90's.
***Zach Condon and Natasha Khan are amazing musicians. I absolutely adore them. Add Jens Lekman to that category too and you have the three highest rotations of the last 18 months

But the other day some kid came up to me and was like "so yo do you like indie rock?" and I was like, what? ...

Even though I am way too old to be a hipster as defined by urban dict., I like CSS if that is Cansei de Sur Sexy, why are they suddenly just CSS now, or is this someone else?, but think the Ting Tings are way too mainstream to be hipster, aren't they? They play them on Nova.
Also I think like all sub-cultures, it comes from music originally, but also extends completely to how people dress and act. There definitely is a hipster way of acting, I've been shunned enough times for not giving a fuck about acting cool at hipster events to know.

I think it will evolve. It seems that just about every genre of music has its roots in a former popular style of music. In 10 years there will be a new as yet unnamed type of music that evolved from hipster music.

CSS is who you think it is. they're not a bad band, they're just not that good at making music. some of their songs are quite catchy, but listen to their lyrics...

OH. But any band who writes songs like Art Bitch, they can influence as many people as they like.
Also, English is their second language after all..I kind of like their surreal turns of phrase.
But anyway, yes, I see your point. I think this hipster pop evolved out of 80s electronic pop, combined with a punk rock ethos (the lack of musical training), perhaps Devo et al are to blame? But then again, they are supposed to have contributed to the worthy invention of hip hop (the good stuff, the bad stuff should have been strangled at birth instead of left to infest the planet as it has) so...
Also, CSS are my Flickr friends and once said they liked my photos so I'm bribed/sicophanticked.
